Julien received the David Bache Trophy, £250, special winner’s commemorative plate and framed certificate and a study trip to Luxembourg courtesy of Villeroy & Boch.

The winning menu:

Mackerel

Cured line caught Cornish fillet

Fennel and Muscat grape Salad

Elderflower granite and dill oil

Barbury Duck

Roast Szechuan spiced

Gingered Carrots, foam, purée

Charred broccoli and jus

Caraibe Chocolate Marquise

Lime leaf ice cream

Organic yoghurt sponge,

Bitter chocolate crumb and Mont Tauch “Maury” gel

 

Lee Warren (left) from Haileybury College, Hertfordshire was second and  Matthew Ryle (right) from The Dorchester, Park Lane, London was in third place.

The competition has been running for 16 years.  This year produced a very strong line up of finalists, with extremely high standards set, which were a credit to all the competitors. Following the competition, a Dinner and Awards Evening was held at University College Birmingham.
